These quick and easy 4 ingredient American style pancakes are the perfect breakfast recipe ideal for a lockdown brunch (or good enough to eat at any time of the day!!)
- 4 medium eggs
- 200g cottage cheese
- 100g rolled oats
- 1 tsp cinnamon
- Your choice of toppings
- Blend the oats, cottage cheese, eggs and cinnamon in a food processor until you have a smooth texture.
- Heat a small non-stick frying pan with a small dash of oil (I find coconut oil works best). Once the oil is heated pour a small ladle amount of batter on to the pan. Cook for 2-3 minutes each side until golden brown.
- Choose your choice of toppings (berries, banana, yoghurt, honey to name a few) serve and voila! A great option for breakfast/brunch or a post workout meal.
My personal favourite is blueberries and maple syrup for a winning combination on the toppings.
There you have it…… an easy to make, healthy version of a favourite breakfast dish!
